If you like Everything Cajun..... then 'Er' Thang Cajun' in Copperas Cove is the spot for you!

Juan Carter who is the owner and chef of the famous food truck that fed crowds of soldiers/customers on post, in Temple and in Killeen says he was approached by the city of Copperas Cove to revitalize the area.

Carter, originally from Baton Rouge, Louisiana says tons of customers encouraged him to get his own restaurant, making the opportunity to have a location in Copperas Cove ideal.

Ok let's start Trey's Food cam, These are the crawfish nachos I ate as an appetizer before my meal, yes I inhaled these babies in 4 minutes 38 seconds:

By the way I ate there before they opened (because I'm exclusive like that lol) and as you can see Mr. Carter is a huge LSU fan.

I then continued the morning eating this delicious plate of fried ribs, red beans and rice annd say it with me now COANBREAD (not cornbread) COANBREAD!

I know your probably saying to yourself... he's done eating now, article over...NOPE!

I had to take a to go plate! This is Catfish Carter with spicy wings and shrimp and rice mmmmmmmm!!

Er' Thang Cajun is located in The Hills Of Cove Golf Course at 1408 Golf Course Road in Copperas Cove!
