A old Chef buddy of mine (Chef Darwin) texted me his recipe for people looking to make a fried turkey:

1st -Make sure the turkey is fully thawed out, de-gut the inside of the bird, boil in salted water (seasoning optional)

2nd -Inject it with seasoning make sure the oil doesn't pass the line in the fryer

3rd- Cook at 350 and the cooking time is 3 minutes per pound (example 12 pound turkey cooks for 36 minutes)

Most importantly! Cook the turkey outside!!!!
