Having grown up in Southern Louisiana, boiled crawfish season is one of our favorite times of the year. It coincides with the start of Mardi Gras and it signals the coming end of winter. As anyone from my home state will tell you, we LOVE TO SHARE our food culture with everyone, but that doesn't mean take it and make it WORSE, and that is what we will be discussing in this letter today.

I'll never forget my first time eating boiled crawfish in Texas. It was at Pappadeaux's in Austin. They had an "all you can eat crawfish" special, and since I hadn't had any since I had moved here I was excited and drove down to Austin for it only to be MASSIVELY disappointing. The crawfish was BLAND, but it was covered in seasonings on the OUTSIDE of the shell. Needless to say, I've never been back to have crawfish there since.

Over the many years I've lived here in Texas, this seems to be the way ALMOST ALL of you prefer to eat crawfish in this state and let me tell you now YOU. ARE. WRONG. Dead wrong.

I'm going to use Texas vernacular in this case: Bless Y'all Hearts. Be clear folks: properly boiled crawfish locks the seasonings and flavors INSIDE the shell, not outside. Why would you season parts that we are only going TO PEEL OFF AND THROW AWAY IN THE FIRST PLACE?

I get it. You're big, bad Texas and y'all put your own "twist" on things, but this ain't it, chief. For example, I'm going to share a video from Houston hot spot The Turkey Leg Hut that they posted recently and drew the ire of Louisianans world wide:

My favorite comment was, "I rebuke this in the name of Louisiana". What is that "chili" they are pouring over it?

Anyway, I will tell you what this means to seasoned crawfish connoisseurs like myself: You don't know how to boil crawfish correctly and the "sauce" pouring is an attempt to cover up what you did wrong.

This is the equivalent to slathering a well made brisket in K.C. Masterpiece BBQ sauce.  See what I mean?
